  • 12 teaspoons sugar (adjust to taste)
  • 1/2 cup whole milk (or a non-dairy alternative like almond milk)
  • A pinch of salt (optional)
  • Chopped pistachios or almonds for garnish (optional)

Instructions

Brew the Tea:

  1. Boil Water: In a medium saucepan, add 2 cups of water and bring it to a boil.
  2. Add Tea Leaves and Baking Soda: Once the water is boiling, add the Kashmiri green tea leaves and baking soda. Stir gently, and allow the tea to boil for about 5 minutes. The baking soda will help release the color from the tea leaves.
  3. Add Spices: Add the crushed cardamom pods and the cinnamon stick to the boiling tea. Let the tea simmer for another 5 minutes to infuse the flavors.

Prepare the Chai:

  1. Strain the Tea: After boiling for 10 minutes, strain the tea into a separate pot or directly into cups to remove the tea leaves and spices.
  2. Add Milk and Sweetener: Return the strained tea to the saucepan. Add the milk and sugar to the tea, stirring continuously. Bring the tea back to a boil, then reduce the heat and let it simmer for another 5 minutes until it becomes frothy and creamy.
