Ingredients

Scale

Gather the following ingredients to make your Mexican Sopa de Fideo:

  • 2 tablespoons vegetable oil
  • 1 package fideo noodles (about 7 oz)
  • 2 medium tomatoes, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder (optional for spice)
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)
  • Lime wedges (for garnish)

Instructions

Cook the Fideo Noodles:

  1. Heat Oil: In a large pot, heat the vegetable oil over medium heat.
  2. Toast the Noodles: Add the fideo noodles to the pot and toast them for 2-3 minutes, stirring occasionally, until they become golden brown. Be careful not to burn them.
  3. Remove Noodles: Once toasted, remove the noodles from the pot and set them aside.

Prepare the Soup Base:

  1. Cook the Vegetables: In the same pot, add the diced onions and cook for 3-4 minutes, until they become soft and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  2. Add the Tomatoes: Stir in the diced tomatoes and cook for 5 minutes, allowing them to soften and release their juices.
  3. Spices and Broth: Add the cumin, chili powder (if using), salt, and pepper. Pour in the chicken or vegetable broth and bring the soup to a boil.

Assemble the Soup:

  1. Add the Noodles: Once the broth is boiling, return the toasted fideo noodles to the pot. Stir to combine.
  2. Simmer: Lower the heat to medium-low and let the soup simmer for about 10-15 minutes, or until the noodles are cooked through and tender. Taste and adjust seasoning as needed.

Serve:

  1. Garnish: Ladle the soup into bowls and garnish with fresh cilantro and a squeeze of lime for added flavor.
