  • 1 tablespoon tomato paste
  • 1 can (14 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste

For the Bread Bowls:

  • 6 small round bread rolls (such as dinner rolls or sourdough boules)
  • 1 cup shredded cheddar cheese
  • 2 tablespoons green onions, chopped
  • ¼ cup sour cream (optional)

Instructions

Prepare the Beef Chili:

  1. Cook the Beef: Heat olive oil in a skillet over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess grease.
  2. Sauté Aromatics: Add the chopped onion and garlic to the beef. Cook for 3-4 minutes until softened.
  3. Add Tomato Paste: Stir in the tomato paste and cook for 1 minute to deepen the flavor.
  4. Incorporate Tomatoes and Beans: Add the diced tomatoes, tomato sauce, kidney beans, chili powder, cumin, and smoked paprika. Stir well to combine.
  5. Simmer: Reduce heat and let the chili simmer for 15-20 minutes until thickened. Season with salt and pepper to taste.

Prepare the Bread Bowls:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Hollow Out the Rolls: Slice off the top of each bread roll and hollow out the center using a spoon. Leave enough bread around the edges to hold the chili without breaking.
  3. Fill the Bowls: Spoon the prepared beef chili into each hollowed-out bread roll, filling them almost to the top.

Bake and Finish:

  1. Add Cheese: Sprinkle shredded cheddar cheese generously over the top of each filled bread bowl.
  2. Bake: Place the filled bread bowls on a baking sheet and bake for 10-12 minutes, or until the cheese is melted and bubbly.
  3. Garnish and Serve: Remove from the oven and garnish with chopped green onions and a dollop of sour cream if desired.
