Ingredients

– 4 pounds whole chicken, cleaned and patted dry
– 1/4 cup unsalted butter, softened
– 2 tablespoons white miso paste
– 2 tablespoons gochujang (Korean chili paste)
– 3 tablespoons honey or maple syrup
– 2 tablespoons soy sauce
– 1 tablespoon sesame oil
– 4 cloves garlic, minced
– 1 tablespoon fresh ginger, grated
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 lemon, halved
– Fresh herbs (e.g., thyme or rosemary) for garnish

Instructions

Creating Miso and Gochujang Butter Roast Chicken is a straightforward process. Follow these steps for a delicious result:

1. Preheat the Oven: Preheat your oven to 425°F (220°C).

2. Make the Marinade: In a bowl, combine the softened butter, miso paste, gochujang, honey, soy sauce, sesame oil, minced garlic, grated ginger, salt, and black pepper. Mix until smooth.

3. Prepare the Chicken: Place the cleaned chicken in a large roasting pan. Use your fingers to gently separate the skin from the meat on the breast area.

4. Apply the Marinade: Spread a generous amount of the marinade under the chicken skin and all over the exterior. Make sure to coat it evenly for maximum flavor.

5. Stuff the Chicken: Squeeze the juice of one lemon half into the chicken cavity, then place the lemon halves inside along with some fresh herbs.

6. Let it Marinate: Cover the chicken with plastic wrap and refrigerate for at least 1 hour or up to 24 hours. The longer, the better!

7. Roast the Chicken: Remove the chicken from the fridge and let it sit at room temperature for about 30 minutes. Then roast in the preheated oven for about 50-60 minutes or until the internal temperature reaches 165°F (75°C).

8. Baste the Chicken: Every 20 minutes, open the oven and baste the chicken with the juices that have accumulated in the pan to keep it moist.

9. Rest the Chicken: Once done, remove the chicken from the oven and let it rest for 10-15 minutes before carving.

10. Serve: Carve into pieces and serve warm, garnished with fresh herbs.
