  • 1 can (8 oz) crushed pineapple, drained well
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 1/2 cups sweetened shredded coconut
  • 1 cup chopped pecans or walnuts (or a mixture of both)
  • 1 teaspoon vanilla extract

Instructions

Prepare the Mixture:

  1. Drain the Pineapple: Start by draining the crushed pineapple well. You can place it in a fine mesh strainer or use a clean kitchen towel to squeeze out any excess liquid.
  2. Mix the Ingredients: In a large mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Stir until smooth and creamy.

Form the Balls:

  1. Add the Pineapple and Coconut: Fold the drained pineapple and shredded coconut into the cream cheese mixture. Stir until everything is well incorporated.
  2. Shape the Balls: Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Repeat until all of the mixture is used up. You should have about 24-30 balls.

Coat the Balls:

  1. Chop the Nuts: Finely chop the pecans or walnuts to make them easier to coat the balls evenly.
  2. Roll in Nuts: Roll each ball in the chopped nuts, pressing lightly to ensure they adhere well. This adds texture and flavor to each bite.
  3. Chill: Place the coated balls on a baking sheet lined with parchment paper and refrigerate for at least 2 hours, or until they are firm and set.
