  • 1 cup fresh cherries, pitted and halved
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips
  • 1/4 cup chopped dark chocolate (optional, for extra richness)

Instructions

Roast the Cherries:

  1. Prepare the Cherries: Preheat the oven to 375°F (190°C). Place the halved and pitted cherries on a baking sheet lined with parchment paper.
  2. Roast the Cherries: Roast the cherries in the preheated oven for about 15-20 minutes, or until they are soft and juicy, and their natural sugars begin to caramelize. Remove them from the oven and set aside to cool slightly.

Prepare the Brownie Batter:

  1. Melt the Butter: In a medium bowl, melt the butter in the microwave or on the stovetop.
  2. Mix Wet Ingredients: Stir the granulated sugar, eggs, and vanilla extract into the melted butter until smooth and combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  4. Add Dry Ingredients to Wet Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until well combined. The batter should be thick and fudgy.
  5. Fold in Chocolate Chips: Stir in the dark chocolate chips (and chopped chocolate if using) to add extra richness.

Assemble and Bake:

  1. Prepare the Baking Pan: Grease a 9×9-inch baking pan or line it with parchment paper.
  2. Layer the Cherries: Pour half of the brownie batter into the prepared pan. Evenly distribute half of the roasted cherries on top of the batter.
  3. Top with Remaining Batter and Cherries: Spread the remaining brownie batter over the cherries, then top with the rest of the roasted cherries, gently pressing them into the batter.
  4. Bake the Brownies: Bake in the preheated oven for 35-45 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs. The brownies will continue to set as they cool.

Cool and Serve:

  1. Cool and Slice: Let the brownies cool in the pan for at least 15 minutes before slicing. This allows the chocolate to firm up and makes it easier to cut clean slices.
