  • 2 teaspoons salt
  • 2 ¼ teaspoons active dry yeast

  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 2 tablespoons fresh sage, finely chopped
  • 1 tablespoon honey
  • 1/2 cup salted butter (for brushing the rolls)
  • 1 tablespoon honey (for brushing the rolls)
  • Additional flaky sea salt for topping

Instructions

Make the Dough:

  1. Activate the Yeast: In a small bowl, combine the warm milk and sugar. Sprinkle the yeast over the milk and let it sit for about 5 minutes, or until it becomes frothy.
  2. Mix the Dough: In a large bowl, combine the flour and salt. Add the yeast mixture, softened butter, eggs, honey, and chopped sage. Stir everything together until the dough begins to form.
  3. Knead the Dough: Transfer the dough to a lightly floured surface and knead for about 8-10 minutes, or until it becomes smooth and elastic.
  4. First Rise: Shape the dough into a ball and place it in a lightly greased bowl. Cover with a damp towel or plastic wrap and let it rise for 1 to 1.5 hours, or until it doubles in size.

Shape the Rolls:

  1. Preheat the Oven: While the dough is rising, preheat the oven to 350°F (175°C).
  2. Divide the Dough: Punch down the risen dough and turn it out onto a floured surface. Divide the dough into 12 equal portions.
  3. Shape the Rolls: Roll each portion into a smooth ball and place them in a greased 9×13-inch baking dish, leaving a little space between each roll.

Second Rise:

  1. Let the Dough Rise Again: Cover the baking dish with a damp towel or plastic wrap and let the rolls rise for another 30-45 minutes, or until they have puffed up.

Bake the Rolls:
