1. Prepare the Beef: Season the beef chunks generously with salt and pepper.
2. Soak the Peppers: In a bowl, soak the guajillo and ancho peppers in hot water for about 15–20 minutes until pliable. Drain and set aside.
3. Blend Spices: In a blender, combine the soaked peppers, garlic, onion, cumin, oregano, paprika, apple cider vinegar, and about a cup of beef broth. Blend until smooth.
4. Cook the Beef: In a large pot, heat oil over medium-high heat. Add the seasoned beef and sear on all sides until browned, about 5–7 minutes.
5. Add the Sauce: Pour the blended spice mixture over the seared beef and stir to coat. Then, add the remaining beef broth and water. Bring to a boil.
