Ingredients

Scale

Gather these ingredients to make your Spicy Corn and Avocado Soup:

  • 4 ears of fresh corn, kernels removed (about 4 cups) OR 4 cups frozen corn, thawed
  • 2 ripe avocados, pitted and chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth (or chicken broth if not vegan)
  • 1 jalapeño pepper, seeded and minced (adjust to taste)
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • Optional toppings: fresh cilantro, sour cream (or vegan sour cream), lime wedges, tortilla chips, hot sauce

Instructions

Sauté Vegetables:

  1. Sauté Onion and Garlic: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

  2. Add Jalapeño: Add the minced jalapeño pepper to the pot and cook for about 30 seconds, stirring constantly, to release its aroma and spice.

Cook the Corn:

  1. Add Corn: Add the corn kernels to the pot and cook for about 5 minutes, stirring occasionally, until slightly softened.

  2. Add Broth: Pour the vegetable broth into the pot. Bring the mixture to a simmer and cook for about 10 minutes to allow the flavors to meld together.

Blend the Soup:

  1. Blend with Avocado: Remove the pot from the heat. Add the chopped avocado and lime juice to the pot.

  2. Blend until Smooth: Use an immersion blender to blend the soup until smooth and creamy. Alternatively, you can carefully transfer the soup to a regular blender in batches and blend until smooth.

  3. Adjust Consistency: If the soup is too thick, add more vegetable broth until you reach your desired consistency.

Season and Serve:

  1. Season to Taste: Season the soup with salt and freshly ground black pepper to taste.

  2. Serve: Serve the soup warm or chilled, garnished with your favorite toppings such as fresh cilantro, sour cream (or vegan sour cream), lime wedges, tortilla chips, and hot sauce.
