Ingredients

Scale

For the Steak:

  • 4 ribeye steaks or your preferred cut (about 6 oz each)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter (optional)

For the Green Sauce:

  • 1 cup fresh cilantro leaves
  • 1 cup fresh parsley leaves
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon honey
  • ¼ teaspoon ground cumin
  • ¼ teaspoon ground chili powder (optional for heat)
  • Salt and pepper to taste

For the Sweet Potatoes:

  • 4 medium sweet potatoes, peeled and cut into cubes
  • 1 tablespoon olive oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground paprika
  • Salt and pepper to taste

Instructions

Prepare the Sweet Potatoes:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Toss the Sweet Potatoes: In a large bowl, toss the cubed sweet potatoes with olive oil, cinnamon, paprika, salt, and pepper. Make sure they’re evenly coated.
  3. Roast the Sweet Potatoes: Spread the sweet potatoes in a single layer on a baking sheet. Roast in the oven for 25-30 minutes, flipping halfway through, until they are golden and tender.

Make the Green Sauce:

  1. Blend the Sauce: In a food processor or blender, combine the cilantro, parsley, garlic, olive oil, lime juice, red wine vinegar, honey, cumin, chili powder (if using), and a pinch of salt and pepper. Blend until smooth. Taste and adjust seasoning if needed.

Cook the Steak:

  1. Season the Steak: Season both sides of the steaks with salt and pepper.
  2. Heat the Pan: Heat a large skillet or grill pan over medium-high heat and add olive oil. If you’re using butter, add it alongside the oil for extra flavor.
  3. Cook the Steak: Add the steaks to the hot pan and cook for about 4-5 minutes per side for medium-rare (adjust time for your preferred doneness). For extra flavor, you can spoon some of the melted butter over the steaks as they cook.
  4. Rest the Steak: Remove the steaks from the pan and let them rest for 5 minutes to allow the juices to redistribute.

Assemble the Dish:

  1. Plate the Dish: Arrange the roasted sweet potatoes on a serving platter. Slice the steaks against the grain and place them on top of the sweet potatoes.
  2. Drizzle the Green Sauce: Generously drizzle the green sauce over the steak and sweet potatoes. Serve immediately and enjoy!
