Ingredients

Scale
  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 2 medium onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup red wine (preferably a full-bodied variety)
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 23 bay leaves
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup water (or beef broth)
  • Optional: ½ cup pearl onions, peeled
  • Optional: Fresh parsley for garnish

Instructions

Follow these simple steps to create an incredible Traditional Greek Stifado:

  1. Prepare Ingredients: Start by cutting your beef into 1-inch cubes and slicing the onions. Mince the garlic and set everything aside.
  2. Sear the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the cubed beef, seasoning with salt and pepper. Sear the beef on all sides until browned.
  3. Add Onions and Garlic: Once the beef is browned, add the sliced onions and minced garlic to the pot. Sauté until the onions are translucent, about 5-7 minutes.
  4. Stir in Tomatoes and Wine: Add the crushed tomatoes, tomato paste, and red wine to the pot. Stir well to combine.
  5. Season the Stew: Add the ground cinnamon, ground cloves, and bay leaves. Pour in the water or beef broth, and stir everything together. Bring it to a simmer.
  6. Slow Cook: Lower the heat to a gentle simmer and cover the pot. Let it cook for about 1 hour and 30 minutes, stirring occasionally. The beef should be tender and the flavors well blended.
  7. Finish and Serve: Check for seasoning and adjust with salt and pepper to taste. If using pearl onions, add them about 15 minutes before serving. Remove bay leaves before serving.
